Gearing up for a kids party!

Rex turned three recently so it was party time... I love nothing more than filling the house with great mates and cooking up a proper feast.
I experimented with some refined sugar-free treats. I used oats, honey, sugar-free Cheerios, raisins and seeds to create these little bars...
... I also made some prawn toast for the first time, which was super quick and easy... and these went in a flash.
These chocolate truffle cupcake always goes down well. You can use left over chocolates from Christmas for the topping.
These cupcakes are the refined sugar-free ones, which taste so delicious. I use coconut sugar which gives them a lovely caramel flavour.
Baking makes me super happy and I hope these party pickings inspire you to get into the old kitchen!
